Our second collaboration release with Kelly Ryan and Boneface is brewing this year. A pilsner malt with wheat and spelt, Nelson Sauvin hops and a subtle blend of spices. Fermented with our unique mixed culture strain in oak barrels for six months then blended and dry hopped with more Nelson Sauvin. The result is a complex beer with smooth acidity and grape like aromas.
Conceived by Mark Tranter ex Dark Star head brewer in a Sussex barn, the brewery is hidden away in the south downs and as such it allows them to brew uncompromising brews of quality and tradition. They use traditional techniques that involve slower yeasts and long maturation times.
