This mixed ferm Saison is loaded up on Sour Morello Cherries from Kent which were delivered to Burning Sky fresh and then added to a nine month old foudre aged saison. Further ageing and refermentation has drawn out a beautiful colour and complexity of cherry fruit, almond and oak flavours.
Conceived by Mark Tranter ex Dark Star head brewer in a Sussex barn, the brewery is hidden away in the south downs and as such it allows them to brew uncompromising brews of quality and tradition. They use traditional techniques that involve slower yeasts and long maturation times.
