When discussing this recipe with the guys at The Veil we all agreed we had to push the boat out on this DIPA. That means a ridiculous brewhouse destroying 50% oat grist and the most in demand brewing ingredient on the market today: Phantasm. Phantasm is a Thiol precursor derived from Nelson Sauvin grapes that boosts tropical fruit aromas through biotransformation in fermentation. Pairing this with loads of gooseberry like Nelson Sauvin and citrus and tropical Citra leads to one hell of a pillowy juice bomb.
