Burning Skys ‘DNA’ beer – ‘Saison Provision’, has now returned to its original format, bottle conditioned in 750ml Champagne bottles. This is the first release and sees the beer maturing an extra 2 months in bottle prior to release.
This tavern strength farmhouse beer is fermented with our house mixed fermentation culture of saison yeast and a blend of Lactobacillus and Brettonamyces. Aged in oak foudres, the resulting beer is tart, crisp, slightly sour and incredibly refreshing.
Conceived by Mark Tranter ex Dark Star head brewer in a Sussex barn, the brewery is hidden away in the south downs and as such it allows them to brew uncompromising brews of quality and tradition. They use traditional techniques that involve slower yeasts and long maturation times.
