An exciting new release from Boon has arrived this week, Apogee. This Oude Geuze is a one-time edition created by Frank Boon and was bottled on April 29, 2019. For this geuze, Frank Boon blended a two-year aged lambic form a brand-new oak foeder (N°83, third filling) with a three-year aged lambic from the oldest foeder (N°79). 'Apogee' means 'the highlight' or 'icing on the cake'.
Boon produces some of the best sour or lambic beers in the world. Exposed to natural yeasts in the air and left to ferment in giant (and we mean giant) oak barrels, it is the most natural way to make beer and yields a depth of flavour not found in any other style.
