The next one of our beers focusing on locally grown ingredients is a collaboration with the fantastic Finca Parrera. Makers of some of the best biodynamic wines in Cataluña we have made this IPA with the addition of Xarello wine must. Xarello is catalan white grape variety that displays beautiful notes of elderflower, lemon and lime and a touch of stone fruit. We decided to do a more peeled back, lighter bodied hazy to compliment the wine must and pair it with Strata, Comet and Loral for enhancing the citrus and floral characteristics while also bringing in some slight dank qualities so you know you are drinking an IPA. Brewed with lots of wheat this IPA has a fluffy texture upfront with a slight sweetness that then drys out in the finish.
