Farmhouse-style Brett IPA is fermented in French wine barrels with their house Brettanomyces blend. The beer is matured for up to 12 months to allow the Brett to develop it's bright, peach-like character. Then, just before bottling, we dry hop in steel tanks with Mosaic and El Dorado to further accentuate the complex and fruity character of the yeast.
