Fermented and maturated in oak vats. With no added yeast this is a true Spontaneous fermentation. They achieve this by adding freshly pressed Barbera grape juice that contains the skins, directly from a viticulturist near Alba. As a result this beer is only Brewed once a year at vintage time obviously.
It pours a hazy red in colour with aromas of cherry and blueberry with sour funky notes. It is quite a tart beer full of sour grape flavours with an almost wine like character too. Very well balanced between sweet and sour giving a rounded full taste.
