We love mince pies, but we have one major criticism about most of them. They just aren't sticky enough. With some deliciously crispy pastry, all mince pies should have a rich and moist filling but most many bakers let you down with bitty, pithy centres.
This recipe though, guarantees a wickedly thick and caramelly filling with some boozy warmth and lots of sweetness to complement the slightly tangy, bitter fruits that make mince meat so divisive. It's a brilliant bit of baking from Bee's Bakery and the Craft Beer Channel.
