We promise you, in all your life as a beer fan, you have never cooked anything with beer quite like this beer ice cream sandwich. Forget the steak and ale pie and beer-battered fish and chips, this is the ultimate beer recipe.

Here Jonny of the Craft Beer Channel and Bee of the wonderful Bee's Bakery show you how to make the ultimate ice cream sandwich – but the ice cream is made with beer. It's not as silly as it sounds, especially if you choose the right beer. Here they've used Northern Monk's delicious, rich coffee milk stout Northern Star but anything with lactose or a very high alcohol content (or both) would work brilliantly, and that little tang of alcohol makes it all the better. What's so great about this recipe is that where in most recipes you cook out the subtleties of the beer, with this one you enhance them – coffee beers sing, spiced beers get up in your grill, Belgian beers are floral and aromatic.

Of course, we clearly think a coffee stout is the best idea but we'd also highly recommend Lervig 3 Bean stout, Rochefort 10, Kasteel Rouge or, god forbid, Fruli.
