Chimay Blue is principally distinguished by its character of a strong dark beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
As one of the biggest Trappist breweries in the world, Chimay beers are now found all over the world despite still being brewed at the Scourmont Abbey under the supervision of the monks. They started brewing back in 1862, using water drawn from the Abbey well.
I've enjoyed Chimay Bleu for many years and it's fair to say it's had its ups and downs. The 2022 vintage is, however, very much on form. dark and delicious with a bit of residual sweetness and that unmistakable Belgian yeast character. Truly a beer to savour.

Quality Belgian Beer. One of the best
Chimay Bleu - Take your time and savour
It's the centrepiece to each order I place with Beer Merchants and the treat I dip into after setting the scene with a few others, as the evening roles into it's second half. Dependable, solid, strong and worth every penny with it's flavoursome character.
