The exact history of saison beers is a little contested. Some say they were originally brewed by farmers at Christmas, left to mature during the colder months and served to agricultural workers in the fields come summer. These workers were called "Saisonniers", from which the saison beer style gets its name. On the other hand, some say saison beer is a much newer style, used by brewers in the Belgian city of Liège to preserve the seasonal spelt beer produced in the region. Regardless of the origin story, we can all agree that saison beers and ales are extremely special brews that, thankfully, can today be bought all year round. They’re light, fresh and cool, but what really defines them is the spicy character that comes from the interesting yeasts used. Saison beers can be peppery, slightly apple-like, or even have spices such as cinnamon on the nose, depending on the malt used.
