Bitter is an old-fashioned British term for a whole host of beer styles that have now diverged and got their own categories. It was used to describe any bitter beer that didn't fall into the category of lager, porter or stout, so once included IPAs, red ales, golden ales and more. These days, however, it’s used to describe classic British styles with solid, malty backbones and a light citrus or earthy hop profile, so styles like best bitter ales, ESBs (extra special bitter ales), and milds. It’s these great tastes that mean British bitter has become increasingly popular in recent years. Despite its old-fashioned reputation, many American brewers are also producing this style alongside the many fantastic examples of it being brewed in the UK.
