Mort Subite

Mort Subite is one of the original lambic brewers, and it is mentioned in in historical documents as far back 1604. They brew beer that is spontaneously fermented, meaning they leave it in open vats overnight to be infected by wild yeasts in the air that slowly produce a sour, vinous beer famous in the region and now the world. The name Mort Subite literally means "sudden death", and refers to a dice game that locals used to play at lunchtimes in the pub of the same name in central Brussels. When it was time to return to work they would play one last round, sudden death.
